Normalize canary versioning

Goals

1. Normalize the numbering of Canary versions to start from 0 instead of 1.

Non-Goals

1. This applies to any changes other than those categorized as chore.

Background

We need this adjustment to standardize the release process for Canary versions. While we could choose to leave things as they are, I believe addressing this issue early on, given that we are still in the project's initial stages, would be beneficial. The missing 1.0.0-canary.0 can also be treated as the first internal development version.

Proposal

After the first latest release, we can adjust the release process to ensure it starts from 1.0.1-canary.0 instead of 1.0.1-canary.1.

Maybe for our future projects, we should consider starting from version 0.x instead of 1.x 🤔
