Modify private cluster to use ghcr docker images #2

We should modify the default private cluster that's created with scripts/minimal-ethermint.sh to use docker images stored in GHCR.

The end goal is that a new user can run:

git clone
scripts/minimal-ethermint.sh

and have a working cluster.
