(NOTE: This is taken from a Marlboro cookbook)
- 1 ½ cups yellow cornmeal
- 1 ½ tablespoons sugar
- 1 ½ teaspoons salt
- 1 ½ cups milk
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 2 eggs slightly beaten
- ⅓ to ½ cup finely chopped Jalapenos
- ½ cup shredded Monterey/Jack/Cheddar cheese
- ¼ cup chopped onion
- Preheat oven to 425 F
- Combine cornmeal, sugar, and salt in a bowl.
- Scald the milk, pour over cornmeal, let it cool to lukewarm
- Add remaining ingredients and mix it all up
- Pour into a well greased 9-inch square/round baking pan
- Bake @ 425 F for 40-45 minutes
