Ingredients

  • 1 ½ cups yellow cornmeal
  • 1 ½ tablespoons sugar
  • 1 ½ teaspoons salt
  • 1 ½ cups milk
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 2 eggs slightly beaten
  • ⅓ to ½ cup finely chopped Jalapenos
  • ½ cup shredded Monterey/Jack/Cheddar cheese
  • ¼ cup chopped onion

Directions

  1. Preheat oven to 425 F
  2. Combine cornmeal, sugar, and salt in a bowl.
  3. Scald the milk, pour over cornmeal, let it cool to lukewarm
  4. Add remaining ingredients and mix it all up
  5. Pour into a well greased 9-inch square/round baking pan
  6. Bake @ 425 F for 40-45 minutes
