dependency conflics with ome-zarr-models-py #31

Moving to ome-zarr-models-py requires to:

  • remove support for python=3.10 (@jluethi is this a deal brekaer?)
  • keep for the momentzarr-python<3 (this should be temporary anyway)

Re dropping Python 3.10 support:
Nothing against this in general. The only thing we should check is whether task environments with Python 3.11 on e.g. the Pelkmans lab cluster would make issues. If they do, we should see if there's a good way to resolve them.
I remember seeing that his legacy infrastructure had issues with some Python 3.12 environment, we currently default to making 3.10 environments there.

A bit of a pity to have to drop 3.10 support already and face these questions early, but an acceptable trade-off overall I'd say :)

Perfect! I will check if 3.11 works well on the Pelkmans before ngio=0.2
