You could leverage the partials to customise this part: https://quarto.org/docs/journals/templates.html#html-partials

Don't hesitate to search through discussions as there are quite few other discussions about modifying partials especially the title one.

This is not really helpful for someone who is staring with quarto.
That documentation has not point me out on how to implement this in my current code.

What is not clear in the documentation exactly? (there is always room to improve the documentation)

"Partials" are partial parts of the document.
If you want to modify the whole HTML document, you need to define the whole template called template.html.
If you want to modify the title block, you need to modify title-block.html.
The section shows a link to the source code, i.e., the current/default version of the partials: https://github.com/quarto-dev/quarto-cli/tree/main/src/resources/formats/html/pandoc
Then you can see the partials, including title-block.html, take it, modify it, reuse it.
