Update UniProt PTM xrefs to use CURIE syntax (#69)

* Switch UniProt PTM xrefs to use CURIEs

These CURIEs are based on the Bioregistry definition at https://bioregistry.io/registry/uniprot.ptm

* Revert uniprot xrefs to have "PTM-" pseudoprefix

* Add IDSPACE annotation for uniprot.ptm
