Bump rancher-monitoring and rancher-logging to latest version

(1) Monitoring from 103.1.1+up45.31.1 to 105.1.2+up61.3.2
(2) Logging from 103.1.0+up4.4.0 to 105.2.0+up4.10.0
(3) Update rancher/shell to v0.3.0
(4) Fix kube-audit missing logRef field
(5) Fix addon patch on build script

Refer harvester/harvester#7324 about the chart&image naming.

Test plan:

1. Install v150 cluster
2. Enable logging, all PODs should come up; no additional container images are pulled
3. Set logging clusteroutput & clusterflow, the audit, event, log can be sent to them
4. Disable logging, it should be successfully disabled
5. Enable monitoring, all PODs should come up; no additional container images are pulled
6. View from Harvester host, VM, cluster metrics & VM metrics work; click grafana can open related window to nagivate
7. Import Harvester to Rancher, view from Rancher, grafana metrics should also work
8. Disable monitoring, it should be successfully disabled
