sed behaves different on MacOS vs Ubuntu on Github Action: Make it safe on both platforms now.

sed behaves different on MacOS vs Ubuntu on Github Action (BSD vs GNU).
Chart release seems to have failed because of this.
This makes it safe to run it on both platforms.
